Happy Earth Day ! I post a lot of photos of nature. So today I’ve decided to post a few (hopefully inspiring) photos of yummy veggies to get you thinking about getting out and digging in your garden. You know, saying “hi” to the Earth. 🙂
This meal is light fare for a spring lunch. It’s a lettuce leaf stuffed with avo, fresh garden tomatoes and red onions. Sprouts, parsley and hemp seeds along with a squirt of lemon and sea salt finish it off. And of course a side of kale chips. You can find that recipe here.
